Ingredients
Ingredients for the Maple Pears:
3 pears *, sliced lengthways
2 tablespoons lemon juice
3/4 cup maple syrup
For the French toast:
1 teaspoon cinnamon
2 teaspoons caster sugar
8 slices brioche loaf or un-iced tea bread
2 eggs
1/2 cup milk
1 teaspoon vanilla essence
30-40g unsalted butter

Method
Toss the pear slices in the lemon juice. Heat the maple syrup in a large frying pan. Add the pear slices and simmer for 10 minutes or until the pears are slightly soft. Turn the pears over once or twice during cooking. Keep warm while you make the French toast.
Combine cinnamon and caster sugar. Beat together the eggs, milk and vanilla in a large shallow bowl. Dip the bread slices in the mixture turning once. Heat half the butter in a large non-stick frying pan and when it begins to sizzle, add half the dipped bread slices.
Cook on one side until golden brown then turn over and cook on the other. Repeat the process with the remaining butter and slices. Sprinkle the French toast with cinnamon sugar and serve with the maple pears, drizzled with the maple syrup cooking liquid.
